Ok - its not the worlds most exciting recipe - in fact, its pretty simple and plain. So here it is...
Chicken and Veg Soup
French Onion Soup Mix
Chicken Breast
Enough water to cover the ingredients
Celery sticks (including leaves) - roughly chopped
One onion, chopped
Chopped veges - carrot, capsicum, brussel sprouts (quartered), beans, zucchini, broccoli... etc
1/2 cup uncooked rice/pasta
Soy sauce to taste
Add water and soup mix to the pot, and bring to the boil. Add the chicken breast (I usually cut it up into smaller pieces), chopped celery and onion. Cook for about 10-15 minutes.
Add the rest of the veges, rice and soy sauce. Simmer for about 20 minutes.
After 20 minutes, remove the chicken pieces, place on a chopping board and "shred" the meat (using two forks to pull it apart). The chicken should be nice and tender due to cooking for so long. Add the chicken back into the soup, mix and serve!!

Thanks Selina - I think my recipe is pretty boring, but the soy sauce gives it a bit of extra saltiness that I like!
